These carrot-date muffins are very moist and the most scrumptious, thanks to the combination of finely grated carrot, chopped dates with their caramel toffee kinda flavor, and a half cup of buttermilk. They are so easy to make, versatile, and utterly delicious. Adding dates to the carrot cake makes it moist and rich. We make these moist, sweet, and decadent muffins over and over again. They are just that yummy and perfect for breakfast or an after-school snack. You may add raisins and/or nuts to the batter as desired.

For this Carrot Dates muffin you will need:

• All-purpose flour &#;  I like using all-purpose flour, but you can substitute some of the all-purpose flour for whole wheat flour. For a gluten-free carrot cake, swap the flour for your favorite gluten-free flour blend.
• Baking powder &#; This helps the cake to rise.
• Salt – A pinch of salt is added to balance the sweetness of the cake
• Cinnamon and vanilla extract &#; These make the cake taste amazing. One teaspoon of both is used in the recipe.
• Oil &#; This keeps the cake nice and moist. Any neutral-flavored refined oil will work. I have used sunflower oil in this recipe.
• Sugar &#; This gives the sweetness to the cake. It makes the cake moist, light, and delicious. I have used granulated white sugar in the recipe, but you may use brown sugar or a combination of white and brown sugar.
• Eggs – The 3 eggs are added to give the cake structure.
• Carrots – 1 and ½ cups of grated carrots are used in this recipe. I use the food processor to grate the carrots because it is easier, though you are free to use the hand grater too.
• Dates -1 cup of chopped dates is used in this recipe. It makes the cake extra moist and gives the caramel toffee taste when you bite into the cake.

How to make Carrot date muffin

All you need to do is combine all the ingredients. Here’s how I like to do it:

• In a large bowl, combine oil, sugar, and salt.
• Add the buttermilk into the mixture and combine well.
• To this mix, add baking powder, cinnamon powder, and vanilla extract.
• Add the grated carrots and chopped dates to the mix and combine.
• To this, fold in the all-purpose flour.
• Prepare a muffin tin by lining it with cupcake liners. Fill each liner to 3/4th.
• Bake in a preheated oven at C for 20 minutes or until a toothpick inserted comes out clean.
• Let the muffins cool in the muffin tray for 5 minutes before transferring them to a cooling rack.
